A gourmet, biodynamic red wine from old vines -crafted with patience and precision, offering depth, elegance, and remarkable length.
Winemaking
Grapes from carefully selected old-vine plots are hand-harvested and sorted in both vineyard and cellar. A cold pre-fermentation maceration precedes a long vatting of 8 weeks with native yeasts, enhanced by manual punch-downs for gentle extraction. The wine matures for 18 months: 30% in new 400L oak barrels, 50% in one-wine barrels, and 20% in stainless steel, before ageing a further 10–18 months in bottle.
Tasting Notes
Brilliant cherry-red with ruby highlights. The bouquet is complex and elegant, with aromas of red and black fruits layered with subtle notes of undergrowth and spice from the oak. On the palate, it is rich and structured yet balanced, leading to a long, refined finish marked by blackcurrant and morello cherry.
